Mandarin Chinese Chicken Salad Spring Rolls

Instructions
- In a large bowl, add romaine lettuce, cooked chicken breast, chow mein noodles, Wonderful Halos segments, green onion, almonds and cooked rotini pasta. Toss gently and set aside.
- Add olive oil, rice vinegar, sesame oil, sugar, soy sauce, sesame seeds, black pepper, Wonderful Halos mandarin juice and salt into a jar with a tight lid; shake vigorously. Or add all ingredients to a small bowl and whisk until combined. Set aside.
- Soak the rice paper in water until floppy. Remove and let water drip off then lay the sheets on a cutting board.
- Place about 1/2 cup salad in the center of one rice paper sheet. Fold the bottom half of the rice paper over the salad, then fold the sides in and tightly roll up.
- Repeat until all rolls are made. Serve with dipping sauce.
