Roasted Asparagus and Cremini Mushrooms with Mandarin Vinaigrette

Instructions
- Heat oven to 500°F. Prepare a rimmed baking sheet with aluminum foil.
- Remove 1” from ends of asparagus, and cut cremini mushrooms into ½ -inch slices.
- Place asparagus and mushrooms on baking sheet. Drizzle with olive oil, using hands to ensure ingredients are covered. Roast for 10 minutes until asparagus has softened.
- Mix the ingredients for the mandarin vinaigrette in a container with a top. Cover the container with the lid and shake vigorously until well blended.
- Remove asparagus from oven once softened, let cool slightly then transfer to serving plate. Drizzle with mandarin vinaigrette. Serve with extra mandarin slices and sprinkle with sea salt to taste.
