Roasted Asparagus and Cremini Mushrooms with Mandarin Vinaigrette

Instructions

  1. Heat oven to 500°F. Prepare a rimmed baking sheet with aluminum foil.
  2. Remove 1” from ends of asparagus, and cut cremini mushrooms into ½ -inch slices.
  3. Place asparagus and mushrooms on baking sheet. Drizzle with olive oil, using hands to ensure ingredients are covered. Roast for 10 minutes until asparagus has softened.
  4. Mix the ingredients for the mandarin vinaigrette in a container with a top. Cover the container with the lid and shake vigorously until well blended.
  5. Remove asparagus from oven once softened, let cool slightly then transfer to serving plate. Drizzle with mandarin vinaigrette. Serve with extra mandarin slices and sprinkle with sea salt to taste.
